Whole wheat flour gives these waffles a nice healthy-hearty glow while buttermilk and melted butter gives them special occasion richness. If the batter is too thick they will still be tasty but will not get that smooth crispy surface so feel free to add more liquid if it needs it.
Ingredients:
1 cup + 1 tbsp whole wheat flour
1 cup all purpose flour
2 tbsp white sugar
1/2 tsp cinnamon
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cups (low fat) buttermilk
1/3 cup melted butter
2 eggs
1 tsp vanilla extract, plus a few drops extra :)
Directions:
- Wisk together the first 7 ingredients (through salt) in a larger bowl
- beat the 2 eggs in a smaller bowl until they look lighter and fluffier
- add buttermilk, melted butter, and vanilla extract to eggs, mix or wisk until well combined
- stir buttermilk mixture into dry ingredients until just combined, the batter should have some lumps but should be a uniform thickness.
- cook in a waffle iron to your desired crispyness :) serve with syrup, berries, jam, whatever you want
